Banana Nut Bread

Here's a recipe for a very nice sweet bread. Could be a bit fattening, depends how much you eat.


S. measures, i.e., 1 cup = 8ounces

When bananas are "past it", if you cannot make it immediately, put them in thefreezer. They will turn black on the outside, but inside they are perfect once defrosted.

1 1/4 cup sugar

1/2 cup butter, softened

2 eggs

1 1/2 cup mashed bananas (3 or 4)

1/2 cup buttermilk or yogurt

1 tsp. vanilla

2 1/2 cups flour

1 tsp. soda

1 tsp. salt

1 cup chopped nuts, whatever are available at the time.

Preheat oven to 350 degrees Fahrenheit/176 degrees Celsius

Grease bottom of pan: One 9 inch by 5 inch or two 8 inch by 4 inch

Mix sugar and butter, add eggs, mix, then add bananas, yogurt, & vanilla and mix

Stir in the rest of the ingredients.

Bake for 1 1/4 hours for 9 inch pan or 1 hour for the 8 inch pans.

Cool inverted for 15 minutes, remove from pans and let cool completely (2hours) before tightly wrapping in aluminum foil.

Keeps for 4 days at room temperature; ten days in fridge. Can be frozen, too.
