Here's a great summer drink that's fairly easy to make... I used to take my daugher to Olvera Street when we lived in LA and we'd always get huge styrofoam cups full of ice-cold horchata at a little taquería there. She reminded me about it a couple weeks ago so I found a good recipe and made up a batch... it's just as good as what they serve in LA, great for a hot summer day:
Ingredients:
185g uncooked white long-grain rice (check Migros)
1185ml water
120ml milk
8ml vanilla extract (i just used a whole packet of vanilla powder since liquid extract is nearly impossible to find)
3g ground cinnamon (more or less)
135g white granulated sugar
1. Pour the rice and water into a blender (do in two batches if you have to), blend until the rice begins to break up, about 1 minute. Let it stand at room temperature for a MINIMUM of 3 hours.
2. Strain the rice water into a pitcher and discard the rice (or cook it for dinner). Stir in the milk, vanilla, cinnamon and suger into the rice water. Chill and stir before serving over ice.
